White Bean Kale Soup

This hearty White Bean Kale Soup is a nutritious and comforting dish, packed with protein-rich beans and vibrant kale, perfect for a healthy lunch or dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups vegetable broth
  • 2 (15-ounce) cans white beans, drained and rinsed
  • 4 cups chopped kale, stems removed
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes.
  2. Add garlic, carrots, and celery; sauté for another 5 minutes until vegetables soften.
  3. Stir in thyme and red pepper flakes, cook for 1 minute until fragrant.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Add white beans and kale; simmer for an additional 10 minutes until kale is tender.
  6. Season with salt, black pepper, and stir in lemon juice before serving.

Notes

For extra richness, serve with a sprinkle of grated Parmesan or a drizzle of good quality olive oil.
