Veggie Sheet Pan Hash

A vibrant and healthy Veggie Sheet Pan Hash packed with colorful vegetables and seasoned to perfection, ideal for an easy breakfast or light dinner.

  • 2 medium red potatoes, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 small zucchini, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. In a large bowl, combine diced potatoes, bell peppers, zucchini, red onion, and cherry tomatoes.
  3. Drizzle the olive oil over the vegetables, then sprinkle smoked paprika, garlic powder, salt, and pepper. Toss to coat everything evenly.
  4. Spread the vegetables in a single layer on the prepared sheet pan.
  5. Roast in the oven for 25-30 minutes, stirring halfway through, until the potatoes are tender and vegetables are caramelized.
  6. Remove from oven and sprinkle with fresh parsley if desired before serving.

Notes

For added protein, serve with a fried or poached egg on top, or add cooked sausage or tofu to the pan before roasting.
