Turmeric Chicken Soup

Warm and nourishing Turmeric Chicken Soup infused with aromatic spices, perfect for boosting immunity and soothing the soul.

Ingredients

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger; sauté until softened and fragrant, about 3-4 minutes.
  2. Add turmeric, cumin, and coriander; stir and cook for 1 minute to release their aroma.
  3. Add diced chicken to the pot and cook until lightly browned on all sides, about 5 minutes.
  4. Pour in chicken broth, carrots, and celery. Bring to a boil, then reduce heat and simmer for 20 minutes until vegetables are tender and chicken is cooked through.
  5. Stir in coconut milk and season with salt and pepper. Heat through but do not boil.
  6. Remove from heat, stir in lemon juice, and garnish with fresh cilantro before serving.

Notes

For added warmth, sprinkle a pinch of freshly ground black pepper or add a splash of hot sauce when serving.
