  • 1 small onion, chopped

  • 2 cups biscuit mix (store-bought or homemade)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 400°F (204°C).
  2. In a large skillet, melt butter over medium heat. Add onion, garlic, carrots, and celery, cooking until vegetables are tender, about 5 minutes.
  3. Stir in flour and thyme; cook for 1-2 minutes to form a roux.
  4. Gradually whisk in chicken broth and milk, stirring until sauce thickens, about 3-5 minutes.
  5. Add cooked turkey and peas; season with salt and pepper. Remove from heat.
  6. Pour the turkey mixture into a 9-inch pie dish or oven-safe casserole dish.
  7. Prepare biscuit dough according to package or recipe instructions.
  8. Drop spoonfuls of biscuit dough evenly over the turkey mixture.
  9. Optionally, sprinkle shredded cheddar cheese over the biscuit topping.
  10. Bake for 20-25 minutes or until biscuits are golden brown and cooked through.
