Tomato Basil Noodle Soup

A comforting and fresh tomato basil noodle soup featuring bright tomatoes, fragrant basil, and tender noodles for a light yet satisfying meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups canned crushed tomatoes
  • 1 cup egg noodles
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper, to taste
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the vegetable broth and crushed tomatoes. Bring to a boil.
  4. Add the egg noodles and cook according to package instructions until tender.
  5. Stir in the chopped basil and season with salt and pepper to taste.
  6. Remove from heat and ladle soup into bowls. Top with grated Parmesan cheese if desired.

Notes

For a richer flavor, add a splash of cream or coconut milk before serving; you can also substitute noodles with gluten-free pasta if preferred.
