Tomato Basil Baked Chicken

A flavorful and healthy baked chicken dish topped with fresh tomatoes and fragrant basil, perfect for a simple weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 2 large tomatoes, sliced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place chicken breasts in a baking dish and drizzle with olive oil.
  3. Season chicken with salt, pepper, garlic, and dried oregano.
  4. Top each chicken breast with sliced tomatoes and sprinkle chopped basil over the top.
  5. If using, sprinkle Parmesan cheese evenly over the chicken and tomatoes.
  6. Bake uncovered for 25–30 minutes, or until chicken is cooked through and juices run clear.
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, serve with a side of garlic roasted vegetables or a fresh green salad.
