Thai Peanut Salad

A vibrant and refreshing Thai Peanut Salad combining crisp vegetables and a creamy peanut dressing for a healthy, flavorful meal.

Ingredients

  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 large carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 3 green onions, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped roasted peanuts
  • For the dressing:
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 garlic clove, minced
  • 2-3 tablespoons warm water (to thin)
  • 1/2 teaspoon chili flakes (optional)

Instructions

  1. In a large bowl, combine green cabbage, red cabbage, carrot, red bell pepper, green onions, and cilantro.
  2. In a separate small bowl, whisk together peanut butter, soy sauce, lime juice, honey, ginger, garlic, and chili flakes until smooth. Add warm water a tablespoon at a time to reach desired dressing consistency.
  3. Pour the dressing over the salad and toss thoroughly to coat all vegetables evenly.
  4. Sprinkle chopped roasted peanuts on top before serving for added crunch.
  5. Serve immediately or chill in the refrigerator for 15 minutes to meld flavors.

Notes

For a heartier salad, add grilled chicken or tofu. Garnish with extra cilantro and lime wedges for a fresh touch.
