  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 2 tbsp unsalted butter, softened (for topping)
  • Extra honey, for drizzling

Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs with buttermilk, then stir in melted butter and honey.
  4. Pour wet ingredients into dry ingredients and mix until just combined.
  5. Fill each mini muffin cup about 3/4 full with batter.
  6. Bake for 12-15 minutes or until golden and a toothpick inserted comes out clean.
  7. Remove from oven and let cool slightly, then brush tops with softened butter and drizzle with honey.
