  • 2 tablespoons vegetable oil
  • 4 boneless, skinless chicken thighs
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup long-grain white rice
  • 1/2 cup heavy cream
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt, pepper, and paprika.
  3. Add the chicken to the skillet and brown for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same skillet, add butter and sauté the onion and garlic until soft and fragrant.
  5. Sprinkle the flour over the onions and garlic, stirring constantly to form a roux for 1-2 minutes.
  6. Slowly add the chicken broth while stirring to avoid lumps and bring to a simmer.
  7. Stir in the heavy cream and cook for 3-4 minutes until the gravy thickens.
  8. Return the chicken to the skillet and coat it with the gravy. Reduce heat to low and cover to keep warm.
  9. Cook the rice separately according to package instructions until fluffy.
  10. Serve the smothered chicken over a bed of rice and garnish with sliced green onions.
