Slow Cooker Italian Beef Sandwiches

Tender, flavorful Italian beef slow-cooked to perfection and served on crusty rolls, perfect for an easy and delicious sandwich meal.

  • 3 lbs beef chuck roast
  • 1 packet Italian dressing mix
  • 1 packet au jus gravy mix
  • 1 cup beef broth
  • 1/2 cup pepperoncini juice
  • 8 pepperoncini peppers
  • 4 Italian sandwich rolls
  • Provolone cheese slices (optional)

Instructions

  1. Place the beef chuck roast in a slow cooker.
  2. In a bowl, mix Italian dressing mix, au jus gravy mix, beef broth, and pepperoncini juice.
  3. Pour the mixture over the beef and add the whole pepperoncini peppers.
  4. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender and shreddable.
  5. Remove the beef and shred with two forks, returning the shredded meat to the slow cooker to soak up juices.
  6. Slice the Italian rolls and pile on the shredded beef, topping with provolone cheese if desired.
  7. Serve warm and enjoy your Italian beef sandwiches!

Notes

For an extra crispy sandwich, toast the rolls lightly before assembling and add giardiniera for a spicy kick.
