  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cumin
  • 1 cup chicken broth
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup sun-dried tomatoes, chopped
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, thyme, cumin, salt, and pepper.
  2. Place the chicken breasts in the slow cooker and pour the marinade over them, ensuring they are well coated.
  3. Add chicken broth, olives, and sun-dried tomatoes to the slow cooker and stir gently to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and cooked through.
  5. Remove chicken from slow cooker and shred or slice as desired.
  6. Serve garnished with fresh parsley alongside rice, potatoes, or a fresh Greek salad.

For extra flavor, marinate the chicken overnight before cooking, or serve with tzatziki sauce for a refreshing complement.
