Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 small red onion, sliced
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions, thinly sliced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a small saucepan, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Bring to a simmer over medium heat.
  3. In a small bowl, mix cornstarch and water to create a slurry, then whisk into the simmering sauce.
  4. Cook the sauce, stirring constantly, until it thickens, about 2-3 minutes. Remove from heat.
  5. Place the salmon fillets on the prepared sheet pan and arrange the bell pepper, broccoli, and onion around them.
  6. Brush the teriyaki sauce generously over the salmon and vegetables.
  7. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  8. Optional: Sprinkle with sesame seeds and green onions before serving.

Notes

For extra flavor, marinate the salmon in the teriyaki sauce for 30 minutes before baking. Serve with steamed rice or quinoa for a complete meal.
