Homemade Valentines Dinner Close-Up

  • 2 boneless ribeye steaks
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp fresh rosemary, chopped
  • Salt and freshly ground black pepper, to taste
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red wine
  • 2 tbsp unsalted butter
  • 1 cup cooked risotto or mashed potatoes

Instructions

  1. Preheat the skillet over medium-high heat and add olive oil.
  2. Season the ribeye steaks generously with salt, pepper, garlic, and rosemary.
  3. Place steaks in the skillet and sear each side for 4-5 minutes for medium-rare, adjusting time as needed.
  4. Remove steaks and let them rest for 5 minutes.
  5. In the same skillet, add red wine and scrape the browned bits from the bottom.
  6. Stir in butter to create a rich sauce, then add cherry tomatoes and spinach; cook until spinach wilts.
  7. Serve the steaks atop risotto or mashed potatoes, spooning the wine sauce and vegetables over the top.

For an extra indulgent touch, serve with a side of roasted asparagus or a glass of your favorite red wine.
