Roasted Chickpea Corn Mix

A crunchy and flavorful snack blend featuring roasted chickpeas and sweet corn, perfect for a healthy on-the-go bite or a tasty appetizer.

  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup fresh or frozen corn kernels
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: pinch of cayenne pepper for heat

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chickpeas dry with a paper towel to remove excess moisture.
  3. In a bowl, toss chickpeas and corn kernels with olive oil, smoked paprika, garlic powder, ground cumin, salt, pepper, and cayenne pepper if using.
  4. Spread the mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the oven for 20-25 minutes, stirring halfway through, until chickpeas are crispy and corn is slightly caramelized.
  6. Remove from oven and let cool slightly before serving.

Notes

For extra crunch, you can add a handful of roasted pumpkin seeds or toss with fresh lime juice and chopped cilantro after roasting for a zesty twist.
