Pumpkin Spice Pancakes

  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 3/4 cup pumpkin puree
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and pumpkin pie spices.
  2. In another bowl, whisk pumpkin puree, milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour wet ingredients into dry ingredients and gently stir until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour 1/4 cup batter per pancake onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip pancakes and cook for another 2 minutes or until golden and cooked through.
  7. Serve warm with maple syrup or your favorite toppings.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking. Top with whipped cream and toasted pecans for a festive touch.
