Pomegranate Glazed Lamb Chops

Succulent lamb chops glazed with a tangy and sweet pomegranate reduction, perfect for an elegant and flavorful dinner.

  • 8 lamb rib chops, about 1-inch thick
  • 1 cup pomegranate juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon balsamic vinegar

Instructions

  1. Season lamb chops with salt, pepper, minced garlic, and chopped rosemary.
  2. Heat olive oil in a skillet over medium-high heat and sear lamb chops for 3-4 minutes on each side until browned.
  3. Remove lamb chops and set aside.
  4. In the same skillet, add pomegranate juice, honey, and balsamic vinegar; bring to a simmer.
  5. Cook the sauce until it reduces by half and thickens into a glaze, about 8-10 minutes.
  6. Return lamb chops to the skillet and spoon glaze over them, cooking for another 2-3 minutes to coat and warm through.
  7. Remove from heat and let rest for 5 minutes before serving.

Serve with a side of roasted vegetables or a fresh green salad to balance the rich flavors of the lamb.
