  • 1 cup peanut butter (natural, unsweetened)
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the peanut butter, honey (or maple syrup), and vanilla extract to the bananas and mix until well combined.
  4. Stir in the rolled oats, salt, and cinnamon until evenly incorporated.
  5. If desired, fold in chopped nuts or chocolate chips.
  6. Transfer the mixture to the prepared baking pan and press down firmly to create an even layer.
  7. Bake for 20-25 minutes or until the edges turn golden brown.
  8. Remove from the oven and allow to cool completely before slicing into bars.
  9. Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 2 weeks.
