No Bake Carrot Cake Bites

  • 1 cup shredded carrots
  • 1 cup pitted Medjool dates
  • 1 cup raw walnuts
  • 1/2 cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a food processor, pulse the walnuts until finely chopped.
  2. Add the pitted dates and shredder carrots, then blend until the mixture starts to come together.
  3. Add the shredded coconut, cinnamon, nutmeg, vanilla extract, and salt. Process until well combined.
  4. Using your hands, roll the mixture into 1-inch bite-sized balls.
  5. Place the bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  6. Store the bites in an airtight container in the refrigerator for up to one week.

Notes

For extra texture, roll the bites in additional shredded coconut or finely chopped walnuts before refrigerating.
