Molasses Crinkle Cookies

These Molasses Crinkle Cookies are soft, chewy, and packed with warm spices, offering a perfect balance of rich molasses flavor and a delicate, crackled sugar coating.

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cloves.
  3. In a large bowl, cream the softened butter and 1 cup sugar until light and fluffy.
  4. Beat in the egg, then stir in molasses and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Place additional sugar in a small bowl. Scoop dough by tablespoonfuls and roll into balls, then roll each ball in the sugar to coat.
  7. Place dough balls about 2 inches apart on prepared baking sheets.
  8. Bake for 8–10 minutes or until the cookies have spread and cracked on top but are still soft in the center.
  9. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

For an extra festive touch, sprinkle the cookies with a pinch of coarse sugar before baking or add chopped crystallized ginger to the dough.
