lentil hotpot

A hearty and comforting lentil hotpot packed with vegetables and warming spices, perfect for a nutritious family meal.

  • 1 cup dried brown lentils, rinsed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 parsnip, diced
  • 1 cup mushrooms, sliced
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large ovenproof pot or casserole dish, heat olive oil over medium heat.
  3. Add onion and garlic, sauté for 3-4 minutes until translucent.
  4. Add carrots, celery, parsnip, and mushrooms; cook for another 5 minutes, stirring occasionally.
  5. Stir in lentils, diced tomatoes, vegetable broth, thyme, and smoked paprika.
  6. Season with salt and pepper, bring to a simmer.
  7. Cover the pot and transfer to the oven. Bake for 45-50 minutes until lentils are tender.
  8. Remove from oven, check seasoning and adjust if needed.
  9. Garnish with fresh parsley before serving warm.

Notes

For extra richness, top the hotpot with mashed potatoes or grated cheese before baking.
