  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 can (20 oz) crushed pineapple, drained
  • 1/2 cup buttermilk
  • 1/2 tsp ground cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
  3. In another bowl, beat eggs, then add oil, vanilla extract, crushed pineapple, and buttermilk; mix well.
  4. Combine wet ingredients with dry ingredients and stir until just blended.
  5. Pour batter into the prepared pan and smooth the surface.
  6. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow cake to cool completely before serving.
