  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 cup powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the cocoa powder, flour, baking soda, and salt.
  3. In a separate large bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips and mini marshmallows gently.
  7. Using a cookie scoop or spoon, drop dough onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until cookies are set but still soft in the center.
  9. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
