Honey Glazed Carrots Green Beans

A vibrant side dish featuring tender green beans and sweet carrots coated in a luscious honey glaze, perfect for adding a touch of natural sweetness to any meal.

  • 1/2 pound fresh green beans, trimmed
  • 1/2 pound carrots, peeled and sliced
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the carrots and cook for 3 minutes.
  2. Add green beans to the boiling water and cook both vegetables for an additional 3-4 minutes until tender-crisp.
  3. Drain the vegetables and immediately plunge them into ice water to stop the cooking process. Drain again and set aside.
  4. In a large skillet, heat olive oil and butter over medium heat until melted and hot.
  5. Add the drained carrots and green beans to the skillet, tossing to coat.
  6. Drizzle honey over the vegetables and season with salt and pepper. Stir gently to combine and heat through for 2-3 minutes, allowing the honey to glaze the vegetables.
  7. Remove from heat and stir in lemon juice if desired for a fresh, bright finish.
  8. Serve warm as a delicious, naturally sweetened side dish.

Notes

For added texture and flavor, sprinkle toasted slivered almonds or chopped fresh herbs like parsley just before serving.
