Garlic Butter Beef Bites with Creamy Mashed Potatoes

Savor tender garlic butter beef bites served alongside velvety creamy mashed potatoes, making for a comforting and flavorful meal perfect for any dinner occasion.

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 4 tbsp unsalted butter, divided
  • 4 garlic cloves, minced
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • 2 lbs Yukon gold potatoes, peeled and quartered
  • 1/2 cup whole milk
  • 1/4 cup heavy cream
  • 2 tbsp sour cream
  • 2 tbsp chopped fresh chives (optional)

Instructions

  1. Place potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes.
  2. While potatoes cook, season beef bites with salt and pepper.
  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add beef bites and sear until browned on all sides and cooked to desired doneness, about 4-5 minutes. Remove beef and set aside.
  4. In the same skillet, reduce heat to medium, add remaining 2 tablespoons of butter and minced garlic. Sauté until fragrant, about 1-2 minutes. Stir in fresh thyme.
  5. Return beef bites to skillet and toss to coat evenly in garlic butter. Remove from heat.
  6. Drain potatoes and return to pot. Mash with milk, heavy cream, and sour cream until smooth and creamy. Season with salt and pepper to taste.
  7. Serve garlic butter beef bites over a bed of creamy mashed potatoes, garnished with chopped chives if desired.

Notes

For extra richness, drizzle a little garlic butter sauce over the mashed potatoes before serving.
