Peanut Noodles

Delicious and creamy peanut noodles tossed in a savory, slightly spicy peanut sauce, perfect for a quick and satisfying meal.

Ingredients

  • 8 oz rice noodles
  • 1/3 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1-2 tsp sriracha (adjust to taste)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/4 cup warm water
  • 2 green onions, sliced
  • 1/4 cup chopped roasted peanuts
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, honey, rice vinegar, sriracha, garlic, and ginger until smooth.
  3. Add warm water a little at a time to thin the sauce to your desired consistency.
  4. Toss the cooked noodles with the peanut sauce until well coated.
  5. Garnish with sliced green onions, chopped peanuts, and fresh cilantro if desired.
  6. Serve immediately or chilled for a refreshing meal.

Notes

For added protein, serve with grilled chicken, tofu, or shrimp; you can also add shredded carrots and cucumber for extra crunch.
