Pesto chicken is a flavorful and easy-to-make Italian-inspired dish featuring tender chicken breasts coated in fresh basil pesto and baked to perfection.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place the chicken breasts in a baking dish and season with salt and pepper.
  3. Brush each chicken breast generously with basil pesto, ensuring they are well coated.
  4. Drizzle olive oil over the chicken and sprinkle Parmesan cheese on top.
  5. If using, scatter cherry tomatoes around the chicken in the baking dish.
  6. Bake for 20–25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, serve with a side of garlic roasted vegetables or a fresh green salad.
