Instructions

  1. In a large bowl, mix peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and well combined.
  2. Shape the mixture into small egg shapes about 1-2 inches long and place them on a baking sheet lined with parchment paper.
  3. Freeze the peanut butter eggs for 30 minutes or until firm.
  4. Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  5. Using a fork or skewer, dip each peanut butter egg into the melted chocolate, fully coating it, then return to parchment paper.
  6. Refrigerate the coated eggs for at least 1 hour or until chocolate is set.
