Veggie Wrap

A fresh and wholesome veggie wrap filled with crisp vegetables and a flavorful spread, perfect for a healthy lunch or light dinner.

Ingredients

  • 1 large whole wheat tortilla
  • 2 tbsp hummus
  • 1/4 cup shredded lettuce
  • 1/4 cup sliced cucumber
  • 1/4 cup shredded carrots
  • 1/4 cup sliced bell peppers (red or yellow)
  • 2 tbsp crumbled feta cheese (optional)
  • 1 tbsp chopped fresh cilantro
  • Salt and pepper to taste
  • 1 tsp olive oil (optional)

Instructions

  1. Lay the whole wheat tortilla flat on a clean surface.
  2. Spread the hummus evenly over the tortilla, leaving about an inch around the edges.
  3. Layer the shredded lettuce, sliced cucumber, shredded carrots, and bell peppers on top of the hummus.
  4. Sprinkle with crumbled feta cheese and chopped cilantro.
  5. Season with salt and pepper to taste, and drizzle with olive oil if using.
  6. Roll the tortilla tightly from one end to the other to form a wrap.
  7. Slice in half diagonally and serve immediately or wrap in foil for later.

Notes

For extra protein, add grilled tofu or chickpeas. Serve with a side of fresh fruit or a light vinaigrette salad.
