Cucumber Feta Salad

A refreshing and tangy cucumber feta salad perfect for a light lunch or a side dish, combining crisp cucumbers with creamy feta cheese and a zesty dressing.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced cucumbers, red onion, and fresh dill.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.
  3. Pour the dressing over the cucumber mixture and toss gently to combine.
  4. Sprinkle the crumbled feta cheese over the salad.
  5. Chill in the refrigerator for at least 15 minutes before serving to allow flavors to meld.

Notes

For extra crunch, add toasted pine nuts or serve with warm pita bread on the side.
