A comforting and easy-to-make Crockpot Pierogi Casserole combining tender pierogis, savory sausage, and creamy cheese, perfect for a hearty family dinner.

  • 1 (16 oz) package frozen potato and cheese pierogis
  • 1 lb smoked sausage, sliced
  • 1 medium onion, diced
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Lightly oil the bottom of the crockpot with olive oil.
  2. Layer half of the frozen pierogis evenly in the crockpot.
  3. In a skillet over medium heat, sauté the sausage slices until browned. Remove and set aside.
  4. In the same skillet, sauté the diced onion and garlic until translucent and fragrant.
  5. Spread half of the cooked sausage mixture over the pierogis in the crockpot.
  6. Add the sautéed onions and garlic on top.
  7. Sprinkle half of the shredded cheddar cheese over the layer.
  8. Add the remaining frozen pierogis on top of the cheese layer.
  9. Mix the sour cream and heavy cream together, then spread evenly over the top layer of pierogis.
  10. Top with the remaining sausage and cheddar cheese.
  11. Season with salt and pepper as desired.
  12. Cover and cook on low for 4-5 hours or until pierogis are tender and casserole is heated through.
  13. Garnish with chopped fresh parsley before serving, if desired.

Notes

For an extra crispy top, transfer the casserole to a baking dish and broil for 3-5 minutes after slow cooking. Serve with a dollop of sour cream or a side salad.
