Crockpot Chicken Spaghetti

A creamy, comforting Crockpot Chicken Spaghetti that’s easy to prepare and perfect for busy weeknights. Tender chicken simmered with cheese and tomatoes creates a flavorful, hearty meal.

  • 2 boneless, skinless chicken breasts
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 (8 oz) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 8 oz spaghetti noodles, broken in half
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a medium bowl, combine cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, cream cheese, shredded cheddar cheese, chopped onion, garlic, chicken broth, salt, pepper, and Italian seasoning. Stir until well combined.
  3. Pour the soup mixture over the chicken in the crockpot.
  4. Cover and cook on low for 5-6 hours or high for 3-4 hours, until chicken is cooked through and tender.
  5. Remove chicken breasts and shred with two forks.
  6. Add broken spaghetti noodles to the crockpot and stir in shredded chicken.
  7. Cover and cook on high for an additional 30-45 minutes, stirring occasionally, until pasta is tender.
  8. Serve hot, topped with extra shredded cheddar cheese if desired.

Notes

For added flavor, sprinkle fresh chopped parsley or green onions on top before serving. You can also add a dash of hot sauce for a spicy kick.
