These Crispy Herb-Infused Roasted Potatoes are golden and perfectly seasoned with fresh herbs, making them a delicious and easy side dish for any meal.

Ingredients

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, rosemary, thyme, and minced garlic until evenly coated.
  3. Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are golden brown and crispy.
  5. Remove from oven and sprinkle with fresh parsley before serving.

Notes

For extra crispiness, soak the potatoes in cold water for 30 minutes before roasting and pat them dry thoroughly.
