Creamy Tuscan Chicken is a rich and flavorful skillet dish featuring tender chicken breasts cooked in a creamy garlic sun-dried tomato sauce with spinach and Parmesan, perfect for an easy Italian-inspired dinner.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and cook until golden and cooked through, about 6-7 minutes each side. Remove and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in chicken broth and heavy cream, stirring to combine.
  6. Add sun-dried tomatoes and grated Parmesan cheese; stir until the sauce thickens slightly.
  7. Add fresh spinach and cook until wilted, about 2 minutes.
  8. Return chicken breasts to the skillet and spoon sauce over them.
  9. Simmer for 3-4 minutes to allow flavors to meld. Serve hot.

Notes

For a lighter version, substitute heavy cream with half-and-half or use Greek yogurt. Serve over pasta, rice, or with crusty bread to soak up the sauce.
