This Cottage Cheese and Chickpea Salad is a healthy, protein-packed dish combining creamy cottage cheese with hearty chickpeas and fresh veggies, perfect for a quick lunch or light dinner.

  • 1 cup cottage cheese
  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cottage cheese and chickpeas.
  2. Add the diced cucumber, cherry tomatoes, red onion, and chopped parsley.
  3. Drizzle with lemon juice and olive oil.
  4. Season with salt and pepper to taste.
  5. Toss gently to combine all ingredients evenly.
  6. Serve immediately or chill in the refrigerator for 15 minutes for a cooler salad.

Notes
