Christmas Breakfast Casserole

This festive Christmas Breakfast Casserole combines savory sausage, eggs, cheese, and bread for a hearty and comforting holiday morning meal that’s easy to prepare.

  • 1 pound breakfast sausage
  • 6 large eggs
  • 2 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried sage
  • 6 cups cubed French bread (day-old)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 small onion, diced
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it up into crumbles. Drain excess grease.
  3. In the same skillet, sauté the diced onion and bell peppers in butter until softened, about 5 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, and dried sage.
  5. Layer half of the cubed bread in the bottom of the prepared baking dish.
  6. Sprinkle half of the cooked sausage, sautéed vegetables, and shredded cheddar cheese over the bread layer.
  7. Repeat layering with remaining bread, sausage, vegetables, and cheese.
  8. Pour the egg mixture evenly over the casserole.
  9. Cover the dish with foil and bake for 40 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the casserole is set and golden on top.
  11. Let cool for 5 minutes before serving. Enjoy!

Notes

For extra flavor, add a pinch of red pepper flakes to the egg mixture or serve with a side of fresh fruit and maple syrup.
