  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 large eggs
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • Whipped cream, for garnish
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine chocolate cookie crumbs and melted butter in a bowl. Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust.
  3. Bake the crust for 8 minutes, then remove and let cool.
  4. In a medium saucepan, heat heavy cream over medium heat until just simmering.
  5. Pour hot cream over chopped chocolate in a heatproof bowl; let stand for 2 minutes, then stir until smooth.
  6. Whisk in sugar, cocoa powder, eggs, peppermint extract, and salt until fully combined.
  7. Pour filling into the cooled crust and bake for 25-30 minutes until set but still slightly jiggly in the center.
  8. Allow the pie to cool to room temperature, then refrigerate for at least 2 hours before serving.
  9. Top with whipped cream and fresh mint leaves before serving.

Notes

For an extra minty flavor, add a few drops of green food coloring to the filling or garnish with crushed peppermint candies.
