Chicken Pot Pie Orzo is a comforting and creamy twist on the classic pot pie, combining tender chicken, vegetables, and orzo pasta in a savory sauce for a hearty, easy-to-make meal.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cups cooked chicken, shredded
  • 1/3 cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup milk
  • 1 cup orzo pasta
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and garlic; sauté until translucent.
  2. Add diced carrots and cook for 5 minutes until slightly tender.
  3. Stir in the flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in chicken broth and milk, stirring constantly until the mixture thickens.
  5. Add orzo pasta, dried thyme, salt, and pepper; cook for 8-10 minutes, stirring occasionally, until orzo is tender.
  6. Stir in cooked shredded chicken and frozen peas; cook for an additional 3-4 minutes until peas are warmed through.
  7. Adjust seasoning as needed and garnish with fresh parsley before serving.

Notes

For a richer flavor, use half-and-half instead of milk and sprinkle some grated Parmesan cheese on top before serving.
