1 whole chicken (about 3-4 lbs), cut into pieces
8 cups chicken broth
3 celery stalks, chopped
3 carrots, peeled and chopped
1 large onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt (for dumplings)
¾ cup milk
3 tablespoons unsalted butter, melted
2 tablespoons fresh parsley, chopped (optional)
Instructions
In a large pot, combine the chicken pieces and chicken broth. Bring to a boil, then reduce heat to a simmer and cook for 30-40 minutes until the chicken is tender.
Remove the chicken from the pot and set aside to cool. Add the celery, carrots, onion, garlic, thyme, salt, and pepper to the broth. Simmer while you prepare the dumplings.
In a bowl, mix together the flour, baking powder, and salt. Stir in the milk and melted butter until a soft dough forms.
Shred the cooled chicken, discarding skin and bones, then return the meat to the pot.
Drop spoonfuls of the dumpling dough onto the simmering broth. Cover the pot and cook for 15-20 minutes without lifting the lid, until dumplings are fluffy and cooked through.
Stir in fresh parsley if using, adjust seasoning to taste, and serve hot.
Notes
For extra flavor, use homemade chicken broth and add a splash of cream before serving for richness.
