Chicken Alfredo Gnocchi

Deliciously tender chicken tossed with pillowy gnocchi in a rich and creamy Alfredo sauce, making for a comforting Italian-inspired meal.

  • 1 lb gnocchi
  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the gnocchi according to package instructions, drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until golden and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and sauce is smooth.
  5. Season with salt, black pepper, and crushed red pepper flakes if using.
  6. Add cooked gnocchi and chicken back into the skillet. Toss gently to coat everything evenly with the Alfredo sauce.
  7. Cook for another 2-3 minutes until heated through.
  8. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, try adding sautéed mushrooms or steamed broccoli to the dish before serving.
