This hearty and flavorful Cheesy Ranch Potatoes and Smoked Sausage dish combines tender potatoes with savory smoked sausage and a zesty ranch cheese sauce for a perfect weeknight meal.

  • 4 cups diced potatoes (about 4 medium potatoes)
  • 1 lb smoked sausage, sliced into 1/2-inch pieces
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper (optional)
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Parboil the diced potatoes in salted boiling water for 8 minutes, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion, green bell pepper (if using), and garlic; sauté until softened, about 3-4 minutes.
  4. Add the smoked sausage slices to the skillet and cook until browned, about 5 minutes.
  5. Stir in the parboiled potatoes, ranch seasoning mix, salt, and pepper; toss to combine evenly.
  6. Pour in the milk and half of the shredded cheddar cheese; stir gently to coat everything.
  7. Transfer the mixture to a greased baking dish and sprinkle the remaining cheddar cheese evenly on top.
  8. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly and the potatoes are tender.
  9. Remove from the oven and garnish with fresh parsley before serving.

Notes

For extra crispiness, broil the dish for an additional 2 minutes after baking. Serve with a fresh green salad for a complete meal.
