  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 1 3/4 cups milk (dairy or plant-based)
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 8×8-inch baking dish.
  2. In a large bowl, mix the rolled oats, grated carrots, chopped walnuts, raisins, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In a separate bowl, whisk together the eggs, maple syrup, brown sugar, milk, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Bake for 35-40 minutes or until the top is golden and the oatmeal is set.
  7. Let cool slightly before serving. Enjoy warm with a splash of milk or a dollop of yogurt.
