These Buffalo Chickpea Wraps offer a spicy, tangy twist on a classic wrap, packed with protein-rich chickpeas and vibrant buffalo sauce for a deliciously satisfying meal.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 large flour tortillas or wraps
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup diced celery
  • 1/4 cup ranch or blue cheese dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Spread the chickpeas on a baking sheet and roast for 20 minutes, shaking halfway through.
  4. Remove the chickpeas from the oven and immediately toss them with buffalo sauce.
  5. Warm the tortillas in a dry skillet or microwave for a few seconds until pliable.
  6. Assemble each wrap by layering shredded lettuce, roasted buffalo chickpeas, shredded carrots, and diced celery.
  7. Drizzle with ranch or blue cheese dressing and roll up tightly.
  8. Serve immediately and enjoy your spicy, flavorful Buffalo Chickpea Wraps!

Notes

For extra creaminess, add sliced avocado or a dollop of vegan mayo. You can also swap buffalo sauce for BBQ sauce for a different flavor profile.
