Blueberry Thyme Chicken

A vibrant and flavorful dish featuring juicy chicken breasts glazed with a fresh blueberry and thyme sauce, perfect for a healthy and elegant dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 teaspoons fresh thyme leaves
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat and add the chicken breasts. Cook for 5-6 minutes on each side or until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add fresh blueberries, thyme leaves, honey, chicken broth, and lemon juice to the skillet.
  5. Simmer the sauce for 5-7 minutes, stirring occasionally, until the blueberries start to break down and the sauce thickens.
  6. Return chicken breasts to the skillet and coat with the blueberry thyme sauce. Cook for an additional 2 minutes to warm through.
  7. Serve the chicken topped with extra sauce and fresh thyme if desired.
