Baked Smashed Garlic Parmesan Potatoes

Crispy on the outside and tender on the inside, these baked smashed garlic parmesan potatoes are a flavorful and satisfying side dish perfect for any meal.

  • 1.5 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Place the baby potatoes in a large pot, cover with water, and bring to a boil. Cook until potatoes are fork-tender, about 15 minutes, then drain.
  3. Line a baking sheet with parchment paper or lightly grease it. Arrange the boiled potatoes on the sheet and gently smash each potato using a potato masher or the bottom of a glass to flatten them slightly.
  4. In a small bowl, mix together olive oil, minced garlic, dried Italian herbs, salt, and pepper.
  5. Brush the garlic olive oil mixture evenly over each smashed potato.
  6. Sprinkle grated Parmesan cheese generously on top of each potato.
  7. Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden brown and crispy on the edges.
  8. Remove from oven and garnish with fresh parsley if desired. Serve hot.

Notes

For an extra kick, drizzle with a little hot sauce or sprinkle red pepper flakes before serving.
