Baked Parmesan Crusted Chicken

Crispy and flavorful, Baked Parmesan Crusted Chicken is a simple yet delicious dish perfect for a healthy weeknight dinner. Coated with a crunchy parmesan and herb crust, it’s tender on the inside and golden brown on the outside.

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and freshly ground black pepper, to taste
  • 2 large eggs
  • 2 tablespoons olive oil or melted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, whisk the eggs until well combined.
  3. In another shallow bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, dried Italian herbs, salt, and pepper.
  4. Dip each chicken breast first into the eggs, allowing excess to drip off, then dredge thoroughly in the Parmesan breadcrumb mixture, pressing lightly to coat evenly.
  5. Place the coated chicken breasts onto the prepared baking sheet.
  6. Drizzle the olive oil or melted butter over the chicken to help with browning and crispiness.
  7. Bake for 20-25 minutes or until the chicken is cooked through and the crust is golden and crispy. The internal temperature should reach 165°F (74°C).
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

For extra flavor, serve with a squeeze of fresh lemon juice or a side of garlic roasted vegetables. You can also add red pepper flakes to the breadcrumb mixture for a spicy kick.
