Baked Feta Pasta with Spinach

A creamy and flavorful baked feta pasta dish enhanced with fresh spinach, combining roasted tomatoes and tangy cheese for an easy, comforting meal.

  • 200g pasta (penne or fusilli)
  • 200g block of feta cheese
  • 250g cherry tomatoes
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1/2 tsp red chili flakes (optional)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the block of feta cheese in the center of a baking dish and surround it with cherry tomatoes and minced garlic.
  3. Drizzle olive oil evenly over the feta and tomatoes, then sprinkle with salt, pepper, and red chili flakes if using.
  4. Bake in the preheated oven for 30 minutes, until the tomatoes burst and the feta is soft and golden.
  5. Meanwhile, cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  6. Remove the baking dish from the oven and stir the softened feta and roasted tomatoes together to create a creamy sauce.
  7. Add the fresh spinach to the sauce and mix until wilted.
  8. Toss the cooked pasta in the baked feta and spinach sauce until fully coated.
  9. Garnish with fresh basil leaves and serve immediately.

Notes

For extra flavor, drizzle with a little balsamic glaze before serving or add toasted pine nuts for crunch.
