Baked Cheesy Dumpling Casserole

A comforting baked casserole featuring tender dumplings smothered in a rich, cheesy sauce perfect for a hearty family dinner.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup whole milk
  • 2 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 3 cups cooked shredded chicken (optional)
  • 2 cups cream of mushroom soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter, melted
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the eggs with milk, then stir into the dry ingredients until just combined.
  4. Stir in 1 cup of shredded cheddar cheese and half of the Parmesan cheese.
  5. In a separate bowl, combine cream of mushroom soup, sour cream, garlic powder, onion powder, black pepper, and shredded chicken if using.
  6. Spread the soup mixture evenly in the prepared baking dish.
  7. Drop spoonfuls of the dumpling batter over the soup mixture, covering as much surface as possible.
  8. Sprinkle the remaining cheddar and Parmesan cheeses on top.
  9. Drizzle melted butter over the entire casserole.
  10. Bake for 35-40 minutes or until dumplings are golden and cooked through.
  11. Garnish with fresh parsley and allow to cool slightly before serving.

Notes

For a vegetarian version, omit the chicken and add sautéed mushrooms or spinach for extra flavor and texture.
