  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup rolled oats
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • Optional: sliced almonds or granola for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the egg, honey (or maple syrup), and vanilla extract until combined.
  3. Add the cottage cheese, rolled oats, cinnamon, and salt to the bowl and gently fold everything together until well mixed.
  4. Fold in the fresh blueberries, reserving a few for topping.
  5. Divide the mixture evenly into small oven-safe bowls or ramekins.
  6. Top each bowl with the remaining blueberries and a sprinkle of sliced almonds or granola if desired.
  7. Bake in the preheated oven for 25-30 minutes, or until the tops are lightly golden and the mixture is set.
