Apple Cider Donuts

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 cup apple cider, reduced to 1/2 cup
  • 2 tablespoons unsalted butter, melted
  • Vegetable oil, for frying
  • For coating: 1/2 cup granulated sugar mixed with 1 teaspoon ground cinnamon

Instructions

  1. In a small saucepan, simmer apple cider over medium heat until reduced by half (about 15 minutes), then let cool.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat the egg, sugars, buttermilk, melted butter, and cooled reduced apple cider until combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
  6. On a floured surface, roll out the dough to about 1/2 inch thick and cut out donuts using a donut cutter or two round cutters.
  7. Carefully fry donuts in batches until golden brown, about 1-2 minutes per side.
  8. Using a slotted spoon, remove donuts and drain on paper towels.
  9. While still warm, toss donuts in the cinnamon-sugar coating until evenly coated.
  10. Allow to cool slightly before serving. Enjoy fresh for best flavor.
